Edamame and Avocado Smash on Beetroot Hommus

Ingredients:

  • 1 Slice Sourdough or Rye bread toasted
  • 1/2 small can of cooked Edamame beans
  • 1/2 ripe Avocado
  • 2 tablespoons of Beetroot hommus
  • Spinach leaves and Cracked Pepper to garnish

      1. Goats cheese and beetroot is a lovely combination. I am a big fan of beetroot anyway. My kids liked it too- that amazed some friends. “A child that eats beetroot,” they exclaimed! And we thought it was normal.
